    1) I own a hand-cranked device which peels, slices and cores an apple in less than 5 seconds. Cost me between $30 and $40 . Worth every penny and perfect for at least one of these 12 recipes. I use it to prepare apples for pies.
    2) I like apples well enough and they are readily available here. (There is an orchard about 3 miles from my house.) But, this video is 1 1/2 hours and started of with deep-frying, which I refuse to do. Unlike the restaurant owners that seem to run these cooking video shows, I have no way of discarding my used frying oil. So, I quit in the middle of the deep-frying.
    3) Can you do anything about my complaints, Chef John??

    As far as dpnut shop offerings… nothing better than an apple fritter.
    ps: if in North America, use Ida or Paula Reds/ These apples need to ripen for a year before they are sold and the result is an amazing intense apple flavour.

    The local shop has honey crisp apples at 20 pounds for 20 dollars, so I was thinking of buying a set of them and was wondering what recipes you have that you think would work best with them. So far I've tried them in apple pie cups, and in apple butter, but am definitely down to try them in more things.
