    Oh dang there are some amazing beef cheeks here in central Texas that would be perfect for Birria! But I also love lamb and I am looking for goat. I am guessing a lamb shoulder or goat shoulder would be best for this stew. Can't wait to make!

    The whole cayenne deal reminds me of Mithridatism (using tiny amounts of poison on yourself in a misguided attempt to build up resistance to it). What if Chef John actually hated cayenne and this was all an elaborate plan to protect himself in case someone put it in his food?
