    I know there is a nother video of him saying you should take meat out of the fridge and cook it cold, now he says leave it at room temperature. It's not just him, but also othere cooks, today say one thing, tomorrow, the total opposite. Stopped watching after i heard that.

    I have seen many cooking shows where the chef sharpens the knive and starts using it without rinsing first …if the sharpening works shouldent the metal dust be rinsed to avoid consuming it…

    I can't believe some of his suggestions. There's a lot of good info here but tons of bad info too. I'm sure he knows it. He's selling g what's popular to say, not what is the most correct. I can give ablong list here, but my fingers will cramp. The short is, watch America's Test Kitchen. They give the reasons behind cooking techniques. They talk about the science of why. It was laughable in this episode that he only mention the seeds of the chili and said "that's the hot part". He has to know that he didn't tell the audience about the veins inside being the hottest part in many chilies. I hate to be so critical, but he's a douche to so many people that he needs to be better than the crappy info he gives here.

    Mr. Ramsay, I have one question concerning the chopping of the union, why do you slice it horizontal? When I have done the vertical slices in the union and then simply chop the union I got also smal pieces without the the danger of slicing the union horizontal.. so why do you slice the union horizontal twice?
