    This a great recipe, thanks for posting. I still use a family recipe that's written with "kitchen" measurements such as "handfulls", "coffee can full", "maybe more???", and so on. And I also use orzo instead of rice which can be added early to the broth to cook and also thicken. I used to find egg based orzo AKA egg manestra, but too hard to find now.

    Cheated when I made this tonight to save time. In lieu of boiling a whole chicken, I just used prepared chicken stock, water, and extra chicken bullion to enhance the flavor. Added in a lemon pepper rotisserie chicken from the grocery store. Absolutely amazing!

    I never understand why Chef John insists on cooking a whole chicken instead of pieces with bones and skins. I think the meat would cook much sooner.
    I tried making this soup once, though I don't remember whether it was exactly this recipe or one by someone else. Anyway, the amount of lemon juice was way too much. I intended making just a small quantity as an experiment but then ended up doubling the amount of other ingredients just to normalize the acid. And I didn't put the entire recommended amount of lemon juice either because I just felt it would be too sour!
    And in the end, I didn't like the soup that much considering all the trouble I went to in order to put it together. Don't get me wrong, I am fascinated by Greek history and culture but I just didn't like the soup. Maybe I didn't cook it right. The only saving grace was the rice. I had no arborio rice and so used one of the fragrant short-grained Indian varieties that release plenty starch if cooked to mushiness. I just told myself I was eating a particularly watery version of congee with a squeeze of lemon. 🙂

    Instead of rice, I use orzo. It's a rice shaped pasta. I, and my deceased mother, thought orzo works and tastes much better. Try it. You won't be sorry.

    I made this today and only added 1/4 cup of lemon juice and then put lemon wedges on the table with minced cilantro, diced jalapeños and crispy fried onions. Everyone here has a cold and boy did it hit the spot!!!
