    Made this Bacon Asparagus Dutch Baby Recipe twice so far. The family gobbled it up quite quickly. It's delicious and quite easy to make.

    Ingredients for 2 large or 4 small portions:
    3 large eggs
    2/3 cup milk
    3/4 teaspoon kosher salt
    1/2 cup finely grated Parmigiano-Reggiano (1/4 cup if packed, but don’t pack it)
    freshly ground black pepper and cayenne to taste
    1 tsp lemon zest
    1/2 cup all-purpose flour *packed
    *push and pack as much flour as you can fit into the 1/2 cup measure)
    1 tbsp olive oil
    6 strips bacon
    1 generous cup sliced fresh asparagus

    During our virus isolation…used this recipe to make a treat for ourselves. We used turkey bacon and needed to add olive oil, though I should have added a bit more. While making the batter, I realized I had tossed out my AP flour so had to improvise with spelt flour. As a consequence, did not rise like the one pictured. It was still tasty. I was thinking about this last night and decided to add hollandaise sauce as a topper. It was very delish. Would there be any other flour instead of AP that would give a nice rise as well? Thanks for this little spark of joy in our dreary virus ridden world.

    It turned out delicious. However while it was baking the center ballooned up into a giant ball. Everyone had a big laugh. The laughter died down as it deflated. I will definitely make this again.

    Dear Chef John,

    I just made this but did not have any Parm in the house. I added in some finely diced shallots and a couple chopped mushrooms and jalapenos.

    I made a 2x batch in my largest cast iron and it is absolutely delicious.

    You could say my double dutch was a real slam dunk.
