This amazing dip’s name used to include another word that refers to an addictive controlled substance, and while we don’t use that word anymore, it certainly fit. Once you start dipping, you can’t stop. So, don’t stop. It’s a party, Or, at least I hope it’s a party, and not you skipping work, sitting alone in a seedy hotel room, eating an entire bowl all by yourself. Make this a lot for our resort get together, Texans like it spicy, but our winter people not so much! I compromise by using a milder sausage and red jalapeños that we smoke ourselves.

every single time i see a dip recipe from chef john, im constantly reminded to get myself a freaking kitchen blowtorch. god i love the top bubbly caramely layer so much, id just toss some extra shredded cheese and blowtorch the top just to relive it layer after layer again

* There is a masher that has 5 blades & is made of silicone & won't harm your pan & divides quickly while cooking.
It's a pity you cannot refer to a cowboy's crack during a cooking show. Oh what times we live in.

Every time that chip dipped into that dip, my envy grew… I am starting to hate/love/hate/love Chef John.
I would just add this comment, that I would recommend using yellow cheddar cheese for this dish. The flavor will be the same, but the white cheese ends up making a funky, unappetizing pink dip the color of raw chicken. Yellow cheese makes the whole thing look more like a queso dip which people invariably can't wait to eat.
