    I make this for my son but as Jamaican banana fritters and put powdered sugar on when they are done. My son eats about 15mini banana fritters

    No sugar whatsoever is needed if the banana is ripened enough; no baking soda or powder is needed either just make sure you pour the batter(already incorporated with melted butter) onto a really hot non-stick pan, the bubbles will provide the leavening. Why bother with white sugar when you have the natural sweetness offered by the titular ingredient.
