If you substitute the pork with fish, bread with a corn or flour tortilla and get rid of the pate you will have an amazing fish taco.
Ingredients for one Bánh Mì:
1 crusty French sandwich roll
3 tablespoons secret sauce (mayo, seasoned to taste with hoisin sauce, and sriracha)
4 ounces roasted pork
2 ounces smooth pate
1/2 cup *pickled daikon and carrot
1/4 cup cilantro leaves
6-7 jalapeno slices
6 thin spears English cucumber
* To make the pickled daikon and carrot, use equal parts and toss in enough seasoned rice vinegar to coat well. Let sit for 15-20 minutes, or until the veggies get slightly limp. Drain and use, or refrigerate. If using regular vinegar, add a pinch of salt and sugar.

Hey Chef John & community. I once followed a recipe for the pickled
carrots and daikon that had me set them in some concoction for at least
24 hours. Recipe said if it smells funky, you're doing it right. Well,
they smelled, and tasted, quite funky. I followed similiar directions to this recipe and
the results were GREAT! The question: Can I make these veggies ahead of
time or is too much time the enemy? How much time might too much time
be? Thanks!!

The first time I ever had these. The shop selling them had a queue of about 30 people. It moved fast 6 people making them and they made the bread rolls fresh in the bakery. It is the best Bahn-mi ever.

Banh Mi Oven in San Jose has some of the best damn Banh Mi, their baguettes have this super delicious garlic flavor….mmmm.
If you are at a Banh Mi place, and never had one, DO NOT GET THE COMBINATION! Get BBQ Pork, or chicken, or 1 single meat that looks familiar. The combo typically comes with more off the beaten path ingredients like Head Cheese, and if you don't know what it is, or don't like it, then you're getting the wrong impression of Banh Mi. I use to work in Little Saigon in San Jose and there were like 7-8 Banh Mi shops within walking distance all with slightly different variations. Don't let it fool you, there are many types of this amazing sandwich!

When I was in S.Vietnam during the war there, we would clean the internal french bread crumbs to make a pocket because when the bread was made little insects would get rolled up in to the bread dough before baking. They have a lot of insects in Vietnam, it happens! In the USA we have better control of food, so the idea still stuck, clean the center bread crumbs out, but we call it, to make more room for the ingredients.

I made this today using the sandwich roll and pan roasted pork recipes and it turned out great. Hubby ate two in one sitting. Will most likely make this again!

He is missing 2 ingredients, first is the pate which I considered fundamental to the banh mi. Second would be Maggie soy sauce which can be altered and I would highly recommend pickled your radish and carrot instead

instead of your secret sauce, which I will try on my own banh mi, you should try soften butter and soy sauce. It's the Vietnamese secret sauce.
I usually love your recipes, but sorry this is a travesty to the Banh Mi
