This actually sounds really good, but I think that every time someone tries to make a comparison to meat it makes it sound less appealing. I'm a meat eater who enjoys a well cooked vegetarian meal, but the constant need to be "meat adjacent" is actually a massive turn off. Let the dish stand on it's own, being what it is, instead of constantly trying to pretend it's something it isn't.
i have been making and eating a mushroom and lentil based meat alternative for quite a while. usually we add some walnuts in there too. most often we use it to make lasagna or burritos

may i suggest adding some chestnut puree and a 1/2 cup of cooked, leftover risotto. its flavour and a binder all in one!
I don't care because I eat anything but you should have specified that this isn't a vegan recipe at the beginning for the people that will expect something like that from the title

My daughter is vegetarian. I don't think there would be a major flavor difference if I used BTB Roasted Garlic base. Gonna try it!

Looks interestingly tasty. Unfortunately it'd never get finished in my kitchen as I'd never be able to resist to temptation to drop a steak or pork chop in with the browned mushrooms and have it that way.

But putting in that beef bouillon was absolutely unnecessary and I don't have the slightest clue why anyone would do that if you get the same result in the taste as a whole with some good veggie stock
It was vegan, until you added the eggs, worcestershire sauce and cheese.
This looks bad in the making, iffy in the pics, and okay just before plating. I don't think I'd make this one, but I would probably try this if someone else made it. Just not a huge mushroom fan. 🙁
I love that you used the beef base here. I feel omnivores can miss out on a lot of great ingredients and dishes because they get pigeonholed into the vegetarian category. But they can still be good ingredients in dishes with meat, just look at mapo tofu.
And if you are a vegetarian you can easily swap the beef base for a vegetarian option.
Gotta pass on this 1 as mushrooms make me 🤮 same for chickpeas 🤮
