As a beet lover here, this is what I make for non beet lovers, everyone finds out how much they actually like beets. Beets are the livers of the vegetable world. Done right beets are just plain ol…..would you say good eats ;).

Beet Guy was pretty lame. I did like his partner Rutabaga Roy. He really brought home the parsnips.
This looks really delicious and I will try it. Following a childhood experience with borscht, however, I will add a good splash of cider vinegar to the cooking liquid. A little tartness really wakes borscht up and I'm sure it will be terrific in this too. I may also add prunes and apple slices near the end.

I have made this several times now…love it. I add potato to mine and top with the traditional sour cream and dill.
Borscht is an annual thing in my house when the weather gets cold, but I might try this one this year. Except I will probay add whole mushrooms and some red wine vinegar.
