When I heard Taralli described as the “potato chips of Italy,” the first thing I thought of was, don’t they have actual potato chips? How can they not have actual potato chips? Then I thought, any snack that gets compared to potato chips, is a snack I want to make. I need to make.

    Dear Chef John, I have a food wish. The extruded batter fries they used to sell back in the day. Was a batter in a gun and they shot the stuff into the oil and voila fries. Thanks : )

    Cacio e pepe is a pasta dish from modern Roman cuisine
    The ingredients of the dish are very simple: black pepper, grated Pecorino Romano cheese, and spaghetti, or traditionally tonnarello.
    NOT Parmigiano-Reggiano cheese (From North Italy,PARMA)
