Made this yesterday, and added in m&m's. So delicious! Can't wait to try making this with white chocolate chips and crushed Oreos. 🙂

  • Hercules Rockefeller on May 19, 2013

I make fudge the old fashioned way, using an Alton Brown recipe. It takes a while, but it's not hard or something you have to sit watching the whole time it cooks. People bum rush me when I bring it somewhere to get a piece of it. People ask me what I do that makes it so good. I think the reason people are so amazed by it is because they are used to this fake fudge. I also tell them the trick is no Velveta cheese, which is some Paula Deen method (puke, gross, I know).

  • Muhammad Rafi Ghifari on October 5, 2013

2/3 cup of powdered milk + 1/3 cup water , simply mix those up.

  • Megan Mosley on December 9, 2013

I just made this and I hope it works out good.

Does anyone know what the piano music is, please?

  • tiamat2009yt on September 25, 2014

Are the marshmallows required for the fudge to set? I don't like mm much, or are they just an extra ingredient that one could add (like nuts or chocolate)?

  • neko305 on October 30, 2014

Can i use a chocolate bar in place of chocolate chips?

  • Steve1967 on January 10, 2015

I just made this and did everything exactly the same as in the video, but when I poured it into the square pan it was a lot thicker than in this video.  I guess I'll wait and see what it's like when it cools.

…it's a damn good thing I just joined a gym, because Chef John is determined to ensure that none of my clothes will ever fit again..

  • Summer Noybn on December 15, 2016

so if you melt this will it be hot fudge sauce?

  • Tonithenightowl on December 29, 2016

I've seen this exact recipe but the mixture is cooked 5 to 6 mins after it comes to a boil. Chef's seemed a little soft to me when he was cutting it. I think you need that extra few minutes of cooking time so it sets up better. Just my opinion it still looks delicious :o)

  • Jason Stanley on January 20, 2017

You are after all, the judge of your fudge.

  • Kristan Pettigrew-Youngblood on April 5, 2017

if you want peanut butter fudge do you exclude the chocolate 😁

  • Doomzdayxx on May 19, 2017

These old videos were much better. You're not distracted by john's extremely annoying speaking cadence. He talked pretty much normal here, only accentuated words mildly and still had a good sense of humor.

  • master vivi on June 21, 2017

can I use cocoa powder instead of the chocolate chips? if yes how much to add? thank you 😊

  • psammiad on July 11, 2017

That's not fudge – it's set with gelatine from the marshmallows, so it's a kind of thick chocolate jelly. Yuck.

  • Lying on the Moon on July 31, 2017

If this isn't working for anyone, use real butter, been failing for seven years to do this simple stupid recipe

  • Sandra Boxill on September 16, 2017

  • justpar2012 on March 15, 2018

Chef John, could his recipe be used to frost a cake? Let cool some then spread? Thanks

  • Happy Wanderer on November 22, 2018

No ohhhhhhld tapatapa? This video’s too old.

  • Rhonna Marsden on December 21, 2018

This is the only fudge ive ever made, going back to when i was a newly wed back in 1978. It comes out perfect every time.

  • John Potter on April 14, 2019

You know this video is really old when chef John didnt use the 'old shaka shaka n oldd tapa tapa'

  • Willow on May 18, 2019

  • Emily Gregory on November 27, 2019

Yummy, you can add raisins or coconut instead of the nuts if you want, really good, who don't love fudge, LoL

  • W11 Granny on December 19, 2019

Does the plastic wrap not melt with the molten fudge?

  • K J on January 19, 2020

Uh, think the easiest recipe is either the marshmallow fluff one where its a jar of marshmallow fluff melted with a 11 oz bag of chocolate chips mixed in. Next easiest is the Eagle Condensed milk brand, pop open a can of that, mix in bag of chocolate chips melt on low heat, pour in a pan let chill then cut. Also makes base of white chocolate fudge with the carnation. Beats sitting there reducing actual heavy cream and sugar(you end up with condensed milk like substance anyways).

  • tricityladytn on May 16, 2020

Anybody else wish he would re-record the audio on these old videos, complete with all the dad jokes, the Chef John-isms (the oooold tappa tapp, etc), and rising inflection?

  • sagshan on August 13, 2020

There is an easier peanut butter fudge

  • jeffrey strain on July 6, 2021

Can you stir with an egg beater?

  • Carol Lynn White on July 20, 2021

YouTube just brought this old video back out from storage. I am definitely going to try this. My brown sugar fudge is wonderful but can't seem to get chocolate fudge to work.
My question is can you substitute the marshmallows with marshmallow cream?
    Thanks!

  • sandra oss on September 10, 2021

    My mother always used cocoa

  • Flea Christenson on October 21, 2021

My grandmother made this often and it was my favorite thing.

  • Flea Christenson on October 21, 2021

My grandmother made this all the time and it was my favorite. Still is. All the fancy fudge shops just can’t compare. Well. Unless they have orange creamsicle. That’s the best.

  • monelle on January 18, 2022

I would love you to post a recipe for plain old-fashioned fudge, no Carnation, no marshmallows … any chance?
