    I make fudge the old fashioned way, using an Alton Brown recipe. It takes a while, but it's not hard or something you have to sit watching the whole time it cooks. People bum rush me when I bring it somewhere to get a piece of it. People ask me what I do that makes it so good. I think the reason people are so amazed by it is because they are used to this fake fudge. I also tell them the trick is no Velveta cheese, which is some Paula Deen method (puke, gross, I know).

    2/3 cup of powdered milk + 1/3 cup water , simply mix those up.

    Are the marshmallows required for the fudge to set? I don't like mm much, or are they just an extra ingredient that one could add (like nuts or chocolate)?

    I just made this and did everything exactly the same as in the video, but when I poured it into the square pan it was a lot thicker than in this video.  I guess I'll wait and see what it's like when it cools.

    I've seen this exact recipe but the mixture is cooked 5 to 6 mins after it comes to a boil. Chef's seemed a little soft to me when he was cutting it. I think you need that extra few minutes of cooking time so it sets up better. Just my opinion it still looks delicious :o)

    These old videos were much better. You're not distracted by john's extremely annoying speaking cadence. He talked pretty much normal here, only accentuated words mildly and still had a good sense of humor.

    That's not fudge – it's set with gelatine from the marshmallows, so it's a kind of thick chocolate jelly. Yuck.

    Uh, think the easiest recipe is either the marshmallow fluff one where its a jar of marshmallow fluff melted with a 11 oz bag of chocolate chips mixed in. Next easiest is the Eagle Condensed milk brand, pop open a can of that, mix in bag of chocolate chips melt on low heat, pour in a pan let chill then cut. Also makes base of white chocolate fudge with the carnation. Beats sitting there reducing actual heavy cream and sugar(you end up with condensed milk like substance anyways).

    YouTube just brought this old video back out from storage. I am definitely going to try this. My brown sugar fudge is wonderful but can't seem to get chocolate fudge to work.
    My question is can you substitute the marshmallows with marshmallow cream?
