Hey chef John, stupid question, but interesting. What do you think of substituting apple vinegar with balsamic vinegar?
I love vinegar based bbq sauces
you may or may not see this but I make mustard bbq sauce quite a bit with vinegar. We use apple cider vinegar or sometimes white vinegar with our sauces. I think balsamic might be a bit too sharp for most tastes but give it a shot. I think it would be good in a ketchup based bbq sauce.

John…. I just made the molasses brined pork chops and a modified version of this sauce for dinner, and it is AMAZING. For anyone who doesn't have apples or apple cider vinegar on hand, this sauce is still amazing with yellow mustard, brown sugar, molasses and lots of black pepper. So Good!!
I'm from Red Oak, NC, Eastern NC and this ain't "OUR" bbq sauce. For 1 million dollars, I'll give you the recipe for eastern NC bbq sauce. Until then, keep tryin'. You are close with your recipe, but only close. You are cookin chops, not NC bbq/pulled pork. Still love your vids!
Made a triple batch of this for the first time last night…granny smith apples…used about 3rd less red pepper flakes…when all was said and done, I added about 3 tablespoons of white sugar which took the acidic edge off. After overnight in the fridge it is f-ing amazing. 4th of July BBQ, here I come! Thanks Chef John!
I want this. I wonder if you marinate the pork chop over night in that sauce. Will it be too spicy?

You'd think this barbeque sauce is legit. This is reminiscent of the line of regional barbeque sauces Kraft put out a few years ago.
Just made this to sauce the pulled pork that I made from braising a fresh pork shoulder roast in a dutch oven for 4 hours. It turned out magnificently. Great as a change from "two-note" cloyingly sweet and overly smoky tomato-based BBQ sauces!
That's sort of South Carolina BBQ except for the apples.

This sauce is one of the top I have tried, I took a little less on the chili flakes but that sauce is great for pork. Love it
I love you chef John but you did a wrong from step number one. That's a big no-no on the Apples…BUT I gotta say I commend you for trying and I bet this is absolutely delicious. Thank you for always doing you best and uploading these recipes for everyone to see

There’s a store bought sauce I really like called Mustard on my Mind, I feel as this would be close too it in taste. Nice work, love mustard.
This is more from South Carolina. They add mustard to everything. Including their BBQ which is unusual but a crime in NC.
Can I leave out the apples for a Keto sauce? I think it would still be delicious.
