    I love the fact that at the beginning he assures us that almond milk or similar would work, you know because some people can’t have real milk….. then the filling has 2 types of cheese and then the blintzes are browned in butter. Thank goodness for the almond milk to save us from the dreaded dairy. 🤣🤣🤣

    I just made it. Tastes good even with cream cheese v. Mascarpone cheese.

    I doubled the recipe but ended up with much filling but out of the crepe batter 🤔😃 and my batter was kinda a bit thick dan even using 1/4 cup measurement, the wrappers were thick, too.
    The filling was also a bit runny, not solid, so I was having a hard time to roll it down perfectly… and I followed the instructions meticulously, but I used 2% milk, instead of whole, is that why? 🤔😁

    Was anyone else worried about the raw egg in the cheese mixture till he put these in the oven? I'm guessing it was long enough to heat the inside enough to kill salmonella. He said that step was optional, but I sure would not omit it.

    I use Farmers Cheese, a very fine curd cottage type. I used to get The Best from Daiter's in Kensington Market in Toronto Ontario Canada, back in the day. It was sold while still in the cheese-cloth. It was delicious.

    For the record, the recipe for this crepe batter fits perfectly to the top of a 16oz Blender Ball cup
    I can’t say if you can mix it in this, I’d think not because it’s full to the top- but it’s a nice container to store once mixed to refrigerate for the recipe required time and to pour from the spout/remix.
    Also I diced fresh pineapple 🍍 and sautéed with butter, vanilla and brown sugar till 😋 how long? That’s you cookin’ 😉 till it’s jam like…
    I added it to half the mixture and it’s a winner. Could just be a topping also
