The main problem with zucchini bread is that it isn’t banana bread, or carrot cake, which is what it’s often unfairly compare it to. However, this easy recipe has something those two don’t. Some mystery. Banana bread tastes like bananas, and carrot cake tastes like cake, but zucchini bread tastes like…we’re not exactly sure, but it sure is delicious. Enjoy!

my mother used to make zucchini bread – I'll have to make some of this for the nostalgia – i always loved it.

Zucchini is incredible. Great way to make sweet bread healthy and tasty. Zucchini bread is hands down, my favorite way to use zucchini. Zucchini brownies are a close second.
Some people feel like a nut; I don't. Would this recipe work without nuts?
I highly recommend slapping some salted, yes salted, butter on it. The salty butter goes perfect with the sweet bread. Gives you a bit of a salted caramel type vibe.
Could you eggplant instead with this receipe?
If you know someone who won't eat it because they are afraid it will taste like zucchini, then tell them it's banana bread later on when they aren't thinking zucchini. My mom did this to my cousin to get him to eat some. He loves zucchini bread now.

Banana nut bread is great as well.
That for the simple recipes.. anyone tried using acorn squash vs zucchini? Also someone gotta say more nutmeg less cyanne 🙂

Zucchini bread is badass.
wow this recipe is great. We could wait til it cooled to cut it. Threw some honey butter on to. I will be making this recipe again. It was so light and tender. 5 stars here.
