I have a very similar recipe, but I use peanut butter instead of ketchup, and it really really makes it. Mmmm.
You can use pork for this too. It's not only in Chinese menus, even many Thai restaurants have something similar.

Always brown your meats till theyre crispy and golden. Much better texture and look than a mushy mix of stuff. Especially for a recipe like this where the meat is the star. Also baby gem / living lettuce is probably a better choice than iceberg (which has more water content and less flavor).
Definitely the go to channel for anything.
