Hi Chef John – would it be possible to pre-make a batch of these and freeze them? I was thinking of taking them through pan frying, freezing them, and then finishing the chimichungas in a hot oven before serving. Is that the best approach?

i just made these with ground beef, corn, kidney beans, and jalapenos…. soooo good
I learned through many cooks on Food Network not to add salt to mushrooms as they cook, but after they are brown.. it slows down their ability to brown.. ao they always started to wilt/brown the shrooms first then added the onion.. then added salt
