Chicken Mushroom Rice Soup – Food Wishes ctm magazine



I received a request recently for an updated mushroom soup, which I thought was a great idea, since the last one was posted over 10 years old. But just as I was starting to plan the redo, I saw a request for an update to our “Just Chicken and Mushrooms” video, and I decided to combine both inspirations, which ultimately resulted in this very delicious, and incredibly comforting, Chicken Mushroom Rice Soup.     Snowy day here and this is on the menu. Like a few others your comment “no one cares” made me laugh but I will say that I have wondered what the difference was between stock and broth but never checked. Thanks for your videos. They are wonderful! 😁😁😁

    Short grained aromatic rice (the varieties grown in India works wonders in such recipes.) Check this link for some varieties: https://www.thebetterindia.com/144520/news-eating-restaurants-fda-rating/
    I can personally vouch for #1 and #3. The fragrance of this rice cooking in butter is out of the world. And if I were you, I'd skip the rosemary, the sour cream and the onion (abomination!)

    Makes a nice soup… but, it also drives home the fact that most grocery stores don't sell fryers anymore. I was looking for a nice soup chicken and all stores sell are parts and roasters. Oh, and the sour cream was a nice touch…

    I made a few tweaks to this recipe (wild rice, no onions/butter/salt/pepper, and cooling the broth overnight to scrape off the fat) and came out with the best chicken soup I've ever had. As a matter of fact, my husband and I are making some right now to fight a head cold. Awesome recipe to be inspired by!
