You will not regret it.
If you have a chopping board that rocks that much you should probably get the bottom flattened out by adding rubberized feet to the corners under it and shaving them until the board lays flat and firm on the surface. Putting a wet towel under it might worsen it in the long run, excess moisture can cause wood to warp over time.
