    Just made this and took the pie out of the oven! I was freaking out because I think I let the sugar mixture cook a little to long, and it thickened up more than id have liked when it was cooling 😬. Pouring it into the egg mixture and whisking was interesting because the caramel had set up to somewhere close to the soft ball stage, which I wasn't to happy about, but I gave my arms a bit of a workout and managed to incorporate it fully in the egg mixture, and decided to this it out with just a splash or two of milk. On close inspection out of the oven it looks and smells like a proper pecan pie from the outside 👍🏻! Now I just have to wait for it to cool to see what the custards inside looks like 😂! I hope the pie turned out alright 🤞🏻!

    I make my "pecan" pie with walnuts! I'm not a big fan of pecans and started substituting walnuts many, many years ago! In fact my, now middle aged, son mentioned that he just can't find a "pecan" pie that compares to mine! I had to remind him that mine doesn't contain pecans and that's why he might notice a difference! LOL

    Went through USAF basic training in 1982. Last man in the chow hall had the least amount of time to eat. I did 6 weeks with pecan pie and water. Never missed a step. I LOVE pecan pie.
