Chef John, what about cooking something ukrainian – banosh, for example?

  • notbill08 on March 29, 2022

This is my recipe! Sort of! Mine's easier! Per 1 cup of Any pancake mix (boxed or homemade) … add 2 tablespoons melted butter, a teaspoon of sugar, corn meal and add eggs and buttermilk accordingly. Always comes out light and fluffy!

Why does your voice go up in the middle of EVERY SINGLE SENTENCE?

  • Nick Contini on March 29, 2022

I actually just soak the cornmeal in whatever liquid I'm using to get rid of the grittiness; no cooking required. I've been using this trick to make my cornbread taste moister for a while now. That said, cooking the cornmeal probably is quicker than soaking, which is why getting the cornmeal in liquid is usually the first thing I do if I'm making cornbread for a meal.

The pancakes are much like our Greek tiganites, though my mother added feta in the batter while cooking, then served them with honey and crushed walnuts, after frying of course.

    Yes please.

  • Hasani Ennis on March 29, 2022

You should do a porridge recipe. I grew up on Jamaican food and the cornmeal mixture minus the flour and frying, with some sweetened condensed milk is how my dad used to make a creamy, savory-sweet porridge 😋

  • Carolyn's List on March 29, 2022

That’s one helluva pinch of sugar😂
