This is my recipe! Sort of! Mine's easier! Per 1 cup of Any pancake mix (boxed or homemade) … add 2 tablespoons melted butter, a teaspoon of sugar, corn meal and add eggs and buttermilk accordingly. Always comes out light and fluffy!

I actually just soak the cornmeal in whatever liquid I'm using to get rid of the grittiness; no cooking required. I've been using this trick to make my cornbread taste moister for a while now. That said, cooking the cornmeal probably is quicker than soaking, which is why getting the cornmeal in liquid is usually the first thing I do if I'm making cornbread for a meal.

The pancakes are much like our Greek tiganites,though my mother added feta in the batter while cooking,then served them with honey and crushed walnuts,after frying of course.

You should do a porridge recipe. I grew up on Jamaican food and the cornmeal mixture minus the flour and frying, with some sweetened condensed milk is how my dad used to make a creamy, savory-sweet porridge 😋
