    I dunno if the issue is that I’m not at sea level as was suggested by some posters or whatever, but this was the worst method for hard boiling eggs I’ve ever tried. They were cooked perfectly, but impossible to peel. I bought three dozen eggs all from the same “batch” and all the eggs I used this method on turned into egg salad. The outer membrane did not release and stripped away a good 1/16” of white away during peeling and they looked terrible. I switched to my own tried and true method of bringing the water to boil first, then plunge the cold eggs in using a pasta basket. Boil them for 13 minutes then shock them cold. Works every time. And I can leave the water boiling to do any other batch of eggs if necessary as the first batch cools in the sink

    Nice… When I was a chef at emerald Delmonico in my station. I stuffed them with the crab meat and topped with caviar it was the best.
