How much port is considered a touch

Hey everyone.. I make this EVERY year and it’s always my showstopper. Make it.
So we get guidance on how to choose the freshest cranberries, but nothing on what variety of apple???!

Can't go wrong with this cranberry sauce every Thanksgiving! I omit the apple slices, replaced it with freshly squeezed orange juice or apple cider.

I made this. Followed directions exactly as shown. It's not good. Star Anise and Cardamom are awful in Cranberry Sauce. Stick with traditional.

INGREDIENTS
Serves 6
150g caster sugar
2 star anise
4 green cardamom pods, lightly crushed
250g fresh cranberries
2 apples, peeled, cored and chopped
Sea salt and freshly ground black pepper
60ml ruby port
1 orange, zested and juiced
COOKING INSTRUCTIONS
Put a heavy-based pan over a medium heat and add the spices. Allow the sugar to melt (without stirring) and turn a rich caramel colour before adding the cranberries and a touch of seasoning.
Cook the cranberries briefly so that they just start to soften, then add the apples and cook for a further 3-4 minutes. Toss regularly to coat all the fruit in the caramel.
Pour in the port, reduce the heat then stir in the orange zest and juice. Bring to a simmer and cook for 10 minutes, stirring occasionally, so that some of the cranberries and apples break down completely and thicken the sauce.
Transfer to a warmed serving dish, discarding the star anise and cardamom pods. If not serving immediately, cool and keep in the fridge for up to 3-4 days. Warm through gently to serve.

Very similar to how I make cranberry sauce, except I usually use a can opener for mine.
Love watching this. All I do is 3 cups cranberries, 1/2 cup water and 1/2 cup juice or wine (or 1/4 cup of each, depending on my mood) and 1/2 cup sugar and 1/2 cup brown sugar, then add two sticks of cinnamon. I strain out any excess liquid, depending on how thick I want it, then quickly blend it, enough to leave chunks of cranberry. It’s not as sophisticated as this, but it’s rustic and simple, which is what I prefer in a holiday meal anyway : ) one day I’ll give this recipe a go!
Just made it and it turned out super good. I just added maple syrup at the end for my sister.

Nope.. the caramel burns at the bottom when you add the cold cranberries and makes the whole thing burned bitter crap.
This is the BEST SAUCE! I make it every year and it’s a home run!

What can I substitute for the port? I only cook with alcohol and can't justify buying a bottle and I doubt it comes in mini bar size. Any suggestions?
Thanksgiving 2021, anyone?
I just made this and used marsala instead of port. It came out bitter and I feel it was the star anise. Next time I'll used cinnamon and allspice instead. My family aren't fans of cardamon even though I love it. I might try adding a touch of apple cider vinegar to quell the bitterness.
