    My wife loves thanksgiving turkey so I make it year round. I just do the breast, cut in half, pounded flat to make two roulades stuffed with sausage stuffing (one goes in freezer) to keep the volume of turkey manageable

    TY TY TY SOOOO MUCH FOR THIS RECIPE!! My kids have flown the coop and its just me and my husband now. Hubby doesn't care for Cornish hens
    (CRAZY I KNOW!) but I have a local store that I get these small (approx 3lb)
    Organic young chickens that are delicious! I have been air frying them (don't laugh they come out moist and delicious!) But I wanted something a little fancier for DATE NIGHT! I am pretty good at whole chicken as long as it is 5 to 6lbs in the oven but these small delicate ones have stumped me!! I love this recipe! So elegant for two! I love not cooking for a family of 4 because we definitely eat a little better now that I feed 2! You know….filet instead of sirloin kind of thing! Thank you for all the recipes! During this covid thing I have made so many of your recipes because I love to cook and it helps with the depression I seem to have from all of this! You have saved many meals for me and you make me laugh and smile and I need it so bad right now! Tytytyty Chef! We all love you and pray that you and family stay well and safe!!!

    I winged it. 😆 I went with carrot, celery and onion. Used a slice of potato bread and several hand crushed European mini-toasts. In addition to one egg, I added some milk to the stuffing. I slathered some softened butter under the breast skin to melt into meat during roasting. Extra dressing baked in glass ramekin. Delicious.

    these things are so underrated. I love them for thanksgiving. They taste kinda like turkey , not as sour as regular chicken. I like that theyre small and easy. There isnt a ton of leftover meat. I never know what to do with leftover turkey meat.
