    To peel it you just need to:
    1. Cut it the cassaca in pieces, cilinder like
    2. Score with the knife over the skin, with the knife point, score deep enough to thick brown skin and down to the white flesh.
    3. Using the knife start to gently pry the skin away from the root. You need to remove the brown skin and the thin pinkish layer.
    4. Use your knife in a pushing motion to help it along at the beginning, but once it's started it's easy to peel the entire yucca and that's it.

    Chef!! These need to be deep fry, and the middle part (string) needs to be removed. I would’ve cooked them longer too in the water. They come out better after you get them.

    Most are not toxic, but there are some some poisonous varieties that, when cooked in a broth, can be made into a very spicy soup. Also, why are you using a potato peeler? Just cut the root into thumb long slices and you can peel it in a more satisfying manner.

    A new food truck pulled up today super close to my house at a liquor store. I got the pulled pork sandwich combo that came with Yuka fries. Sandwich was awesome, and the fries were fairly close to potato fries. Slight difference but I absolutely loved them. Gave some great sauce to go with them and they were great on their own as well. Highly recommend these.

    my favorite method is to deep fry it after all hard skin removed, dont worry is not gonna soak up the oil, then immidietly put in ice cold water, watch the yuca roots crack, its not gonna break apart or mushy if you just let it soak there for a short time, then put it in air fryer, its very healthy, the oil from deep frying process was already washed away, then you got yourself a nice crispy and soft on the inside yuca roots fries… 1000x better than any french fries, hands down
