Double Chicken Tea – Ultimate Chicken Broth – Food Wishes ctm magazine

Sipping on a nice, hot cup of chicken broth is one thing, but when we double the amount of bones and meat used to make it, and then reduce the final product by half, we’re talking about an entirely different experience all together. For lack of a better description, this is like drinking a chicken. Pure, liquid chicken. You’re welcome, soul.

Hi chef John- you know you can get the same clear chicken broth by cooking it in a pressure cooker for 45 minutes, right?

What if one also cuts the four chicken legs off as well as the breasts ?

  • Per Ardua ad Astra on January 22, 2021

I would be keen to know how high the nutritional / protein / calorific value of this “Clear Chicken Tea Broth” is ? Is it off the chart or just good ? What would be the most potent broth to give energy to an invalid ?

  • Per Ardua ad Astra on January 22, 2021

I wonder if this broth instead of chicken stock cubes would boost an already highly flavoursome soup such as Double Gloucester Cheese Soup ?

  • Per Ardua ad Astra on January 22, 2021

I would recommend enhancing the flavour with 15 % of the initial volume being dry white wine.

Other comments here towards ginger and hot peppers would be an interesting variant.

  • Bruce Leadbetter on March 15, 2021

After you pull the solids out roast the bones in a hot oven until browned and return to the broth.
