Would Gin Gins candied ginger work? They have crystallized and candied but the store near me only has candied. You used the words interchangeably but I don't want to make an error.

Yo these are really good~ and they do hold shapes, if one sculpts them by hand. I did that, and mine turned out to be delicious.
I use a recipe that my grandma used to make for us at Christmastime but she rolled them very small and then you bake them for much less time–so good!!

If a person can't obtain crystallized ginger in their small town grocery store, could a guy use ginger root & if so, how much would you say?
Also, I want to put these cookies in a pie crust w/ pecans to make pumpkin cheesecake dessert. Would keeping the peppers in there be advisable for such a dish as that? I'm thinking if I wanted to keep the cookies for eating it'd serve better than in the cheesecake, but as I've not made either before, what do I know, LOL? Appreciate your channel & love all the recipes, but in this instance was curious as to your thoughts regarding my lil veering off the norm a bit w/ this particular recipe!
