It's taking forever for me to get the tin out of my mind when I see corned beef mentioned in American recipes. That's corned beef in the UK. Canned, and from somewhere in South America. Tasty, but now I know it's not the real thing. Your corned beef is our salt beef. Unfortunately not regularly available, and never spiced. NOW I KNOW!!!! I will be making my own from now on, and if I were younger???????? Now that I've been eddicated, here's looking forward to enjoying so many more of your recipes!

You don't feel the need to soak the corned beef first? I soak it overnight then dry rub it and leave that overnight then I cook it. Six hours in the oven THEN. I steam it in my bamboo steamer for an hour. You remember that scene in When Harry met Sally?

Hi Chef John, I hope it isn't too critical that the fat side is up with seam down? I think I did it right but having second thoughts. Also, I didn't have as much spice left over as you did. My CB wss 4.25 kbs. Thanks for all the wonderful recipes.

Oh, other recipes using Corned Beef required a 'desalination process' by soaking the corned beef in water overnight. Does this mean this recipe is saltier?

This is not pastrami, it is not smoked. Also, if you don't soak that brined corn beef in water overnight, it will be way too salty.
