    I tried this recipe but it didnt turn out that well becausei had no choice but to use lima beans from a can and it must have been sitting on the shelf for about a year because it ruined the entire dish! 🙁 I gotta try again… next time I'll add bacon :p

    I have never tried succotash before. Last night I tried a vegan version, Colleen Patrick-Goudreau's version. It didn't have much taste, then today I found a dressing recipe in another American cookbook and she made the dressing with some oil, vinegar, Dijon Mustard, garlic, curry powder, salt and sugar. Really yummy. I know it's not served with bulgur wheat, but I served it that way. Sorry…. but it tasted sooo good.

    I found that GREEN BEANS need about 20 mins. to be properly cooked, while zucchini only requires ~ 5 mins.

    This is not classic succotash , original succotash has no corn or tomatoes in it , it's mostly potatoes

    As a gardener I find this recipe adaptable to most any vegetable, I especially like it with a majority of okra and roasted in the oven with some diced potatoes and smoked sausage or cut up bits of rotisserie chicken added toward the end of cooking. Can be made with or without lima beans or any other veggie can be added or omitted. I especially like using diced scallop squash for which I have limited other uses.
