The spice lady is so right, buy whole and ground up what you need when you need it. Dried spices and herbs will eventually lose their flavor. Its 1am and I just want to go cook amazing things now!

    What about when you're boiling food such as dried lentils, dried pasta, etc? From what I'm coming to understand, you can't just boil the spices since the boiling water will break down most of the spice content by the time the food is finished boiling. Can't seem to figure this out anywhere… I wonder what Gordon Ramsay would say about this.
