The only question I have is… As a chef, I was always told to not put wine into my food if I was no prepared to drink it. I tested this method with a bottle of £6 Romanian Pinot Noir and then again with a 2019 Malbec and the flavours where completely different.
I slow cook most things in my oven. I put it on 275-300° F and I put aluminum foil on the top to seal it and I put the lid on that. All that steam makes the meat juicy and it will fall off the bone. I do this with my roasted potatoes. I make them Sicilian style and I give a light light sprinkle of nutmeg and sweet cinnamon. Not cassia that we think is cinnamon here in the states but that sweet light Asian cinnamon. Just a lil and it changed the whole dish! I cover them and leave them in for 1 1/2 hrs on really low heat then when they are tender I take off the fouls and crank that bitch up for about 5-10 minutes and they get a beautiful color to them and have a great crispy and soft contrast. When I make pork or especially when I make colcannon I know I’m Sicilian but I was shown by an Irish woman. And what I do when u boil the ham ( they call ham bacon. Our bacon is pork belly and ham is the pigs ass. There bacon is the pigs ass) but when I boil it I throw it 2 sweet cinnamon sticks 5 cloves 1 whole all spice and a tiny bit of nutmeg ground and in a tea bag I add half of an apple sin and all and I put it in the pot and boil all of that. I use a huge piece of ham huge. I have to use my 18 qt Sunday gravy pot I use when I make my Sunday gravy. That’s how big it is so that flavor will seep right into it cause I boils it for 4 hrs or more a piece that size. It’s phenomenal absolutely phenomenal. I sometimes also do my stew in the oven. I make red Sicilian stew obviously Italian/Sicilian stew. And my dad n grandpa always did it on low really low all day on the stove. But I like a cast iron roasting pot on low all day in the stove. U don’t have to worry about it sticking or burning. My regular American stew I do either in the oven or in my huge crockpot. It comes out beautifully in both. Thank you for these videos!

I love his techniques but I could never afford most of his ingredients with as many as I feed. I would love him to make foods I could actually afford to cook.
I actually can cook somewhat like this. I clean up as I go, I plan ahead, the food comes out great, I have the the right dishes. I can’t get the presentation and I’m not that quick! Preparation takes the same amount of time as the cooking! Frustrating! 😳 The taste is there, Everything looks like a casserole though!!

If the dealer can't sell these expensive mushrooms, then how does he maintain his business? They seem to get bad pretty fast within a day.
Don't ever try to touch the boiling sugar. It will melt through your skin. I had an accident then I was 12 where I poured it on my hands "by accident". It was the most intense pain I have had in my entire life ever. The sugar ate itself into the flesh in a matter of a second. I quickly tried to scratch it off and peeled the skin off next to my thumb. I screamed for 3 hours until the burning pain started to phase off. "Luckily" it came mostly on the palm and was able to heal with close to no burn marks. It's almost unbelievable miracle. I believe that God healed the wounds and I am grateful.
All I know is that I would love to be his nabor

That's a great short rib method. And after watching ridiculous French chefs ruin everything with egg and butter, it's a welcome respite.
One thing I can add: use a touch of dried chilli in the pan. This won't exactly spice the dish, but helps bring out other flavours. To go further down this route, once can use allspice.
Gordon: Never be embarrassed about going to your butcher and asking for cheap cuts, beef short ribs are incredible

he's a great chef but the brisket really brings out his British "i boil meat" heritage.
if you are going to make a guide to slowing you should start by explaining the pointof slow cooking: Why take hour too cook when you could just microwave it?
Answer is the longer you cook it the more the flavor of the spices, veggies and meat gets mixed together. If you microwave it, the flavors wont mix because they cook too quickly…. Man i wish someone told me that when i was in college…. I had to learn with experience because would just to me "because microwave is bad or unhealthy" which sounds more like answers of incompetent people to me then anything so i kept using microwave.

NEED HELP! Gordon says 3 to 4 hours for the brisket but doesn't specify a temp. Other recipes say 10 to 14 hours so I'm worried about undercooking it, or turning it up too high and burning it. Does anybody know the right temp?

I wish these short ribs were cheap, but I ended up paying $47 for grass-fed beef short ribs from sprouts. I like how these are keto-friendly and I'm praying they come out o.k. as I'm pretty new to cooking. You're a pretty great person to follow though.
