    I have cooked this dish recently, didn’t have minced turkey so I diced the meat just like how I would dice garlic. I have noticed also that the recipes here don’t 100% match the ones in the book. I wonder which one came first: the book or the videos? Anyway, the recipe in the book wants you to cook the leek in the pasta water. I sticked to this version, frying in the pan. The result was very good, definitely belongs to my regulars. And I even forgot the cream (which made the whole dish a bit dry but still tasty!)

    Why do you use olive oil for the pan?
    I have learned that it would not handle those high temperatures very well (smoking and burning I guess)

    surprised a world renowned chef doesnt know why to add salt to water for boiling, it doesnt make it faster, actually the opposite. salt raises the boiling temperature of water, so the water is hotter when it boils (over 100 degrees) but it takes longer.
