Chicago's Dog House restaurant in the Lincoln Park neighborhood serves a pear-brie-dijon char dog called the French Poodle.

Do you still standby you use of "Grilled Cheese" when you more recently acknowledged the codified standards that would make this a "Melt" or, more specifically, a pear melt?

Just wanted to let you know that we used this as inspiration during the Valentine’s Freeze power outage in Texas and cooked it in a pie-iron over an open fire in our hearth…pretty fabulousness.

A 4/20 joke, and a Jay Z reference? Chef John should start a cooking with weed channel!!!

  • Erik Hansen on April 6, 2021

I finally just made this. It was delicious. I would suggest throwing in some balsamic vinegar somehow. Either drizzle inside before cooking or dipping in some while eating. You are the Simon Bar Sinister of your balsamic vinegar (close enough). It really was fantastic.

Yeah, who the want to eat a dis-aligned sandwich ha ha ha! I really enjoy watching you recipes, Sir, and all your bits of commentaries here and there! I am about to make my version of this sandwich right now but with an apple if I can't find a pear in my neighborhood tiny market!

Wow! Listen to that crackling sound of a grilled Brie & Pear Sandwich! A music to my ears!

  • Keith Wilson on September 25, 2021

You’re a pear baller, but are you also a cork soaker?

  • Dino Malva on September 28, 2021

Never thought of eating a pear like that

  • Keith Wilson on October 2, 2021

Just for clarification, did you leave the white crust on the cheese slices? I didn’t know those were edible.

  • Russ Burton on October 13, 2021

I liked the 4-20 reference. I had never thought of brie for a grilled cheese, but it makes sense. I just happen to have some brie in the fridge, this might be lunch tomorrow

What kind of cheese's name please, I want to cook to my children but too many brand name Cheeses in the supermarkets. I am Asian and I don't know too much about other cultures' foods. Thx

  • Pluto on November 7, 2021

Why in America is it called "grilled" when it is obviously fried? Not a grill in sight!!!

  • Frank Vehafric on November 8, 2021

Could you add a few crumbles of a good blue cheese to that? Please say yes.

  • Chico Deluxe on November 25, 2021

my favourite part is the sounds of chef John hogging down this sandwich right in my headphones

  • Chris Curran on January 6, 2022
