    Uhhh..sorry chef John but that is not chorizo…you’re using chourico. Chorizo is a Mexican sausage loosely fitted into the casing unlike chourico which is Portuguese and is smoked in the casing making it tightly fitted into the casing and easy to cut….I’m quite sure you know the difference between the two…
