Double cream feta which is like cream cheese and available in deli's seems like a good choice and should work.
if you had blended the roasted peppers with the feta dip it would have been like the real Greek recipe
You might have just convinced me to grill some boneless, skinless chicken breasts. I generally avoid that, but I have a teacher appreciation dinner to cook for and I think this would be the ticket!

Your oil theory is legitimate. I've been adding oil last on al my meat since watching a bbq show that provides some good evidence for the oil creating a barrier (link below if you're interested) .

As for the greek chicken I wonder if it will come out the same on a cast iron. I make a similar marinade for chx thighs with the cast iron skillet (adding a little brown Sugar for that faux grill flavor) and put it on a salad with cherry toms and tiny mozzarella balls.(fresh basil 🔥🔥) Soo good.

When I was an exchange student in the US, I regular had to eat boiled, unsalted boneless skinless chicken breast. Seeing this really brings back those memories. I dropped like 20 pounds in a year btw.

Throw it in a pita. Add some roasted cucumber, bell pepper and olives and greek salad dressing. Humus and tziki. Lemon juice in the marinade and a few scrapes of skin.
