Hawaiian Garlic Shrimp Scampi – Food Wishes ctm magazine

    We've been living off island for 2 years now and all I want is trips back up for shrimp truck. Thank you for posting this so I can now make it at home while dreaming we're back living on island. Also, Giovannis actually marinate their shrimp in garlic olive oil before cooking, and the best way to eat the shrimp is to hold it in your mouth, suck the juices out, then pull the shrimp out. So Ono!

    Oh boy ! Make 1/2 pound of shrimps with the peel, and then, oh what the hell, let me make the other 1/2 pound without the peel (as an excuse) and eat it too !

    The roasted/fried garlic is wonderful ! Try to add that on top of a nice beef sirloin steak.
    The shrimp came out a lil underseasoned and would probably use a little lemon marinated, but still, I ate a crapload of them…. I probably over indulged on the garlic too but no matter cuz after all, I'm the Count Dracula of the roasted garlic.

  • A better way to approach this is by making a seafood broth using the removed shells, reducing it way down, and adding it to the garlic butter along with mirin or rice vinegar to emulsify it. That way you get the crunch and full flavor of the dry seasoning and the umami of the shrimp shells without having to suffer the shells.

    I used to live in Hawaii for many years. The shrimp truck on the North Shore is pretty famous and this is typically served with an ice cream scoop (or two) of rice and a scoop of mac salad. Mmmmmmm.
