I calculated my cost of making mayo… it was quite surprising. I thought pure olive oil was too… oliveoiley, so I used some avocado oil I had and just a bit of olive oil. I figured based on the volume of oil alone in one cup of mayo it cost me $6. I detest store bought mayo and haven't bought it ever in my adult life, but damn home made mayo can be incredibly expensive.

Wow, I use an electric hand whisker it can get a bit messy but generally it's reliable.
But this method is excellent if you want the standard white mayo, as opposed to the slightly yellowed/cream one that does not include the egg whites of course

I just made this in 2021. I used seasoned rice vinegar so I left out the sugar and 1 cup of vegetable oil and 1/2 cup of avocado oil and it turned out excellent.

mine often comes out too thin, emulsified, not entirely broken, but not as thick as I would like. is there a way to avoid that, more oil, less oil, is it a temperature thing? some say (Gordan Ramsey) that salt should only be added after emulsification although most don't.

Wow. We are through the looking glass now. Just dump in all the oil at once! And…it works perfectly. The only risk is over emulsifying it, so you get a stiff texture. Just stir in some more vinegar and mustard to loosen it up.

Ok, I made this twice just now because the first attempt failed miserably! Lol 😂
I have chickens and ducks so no shortage of eggs to experiment with… just begrudging the wasted cup and a half of oil. I had success the second time but I truly had to sit there and very slowly pulse the entire time. Then I had to incrementally move the stick blender upward while continuing to slowly pulse. It took forEVER but it came out perfectly. Just baked a fresh loaf of sourdough. Can’t wait to try them together! Thanks, Chef John!

It is important to use a jug that just fits the stick blender, preferably the one that came with it. I made this mistake in the past but corrected it by using the whisk attachment for my stick blender.
Followed directions to the "T" and it came out horrible. The mayo and oil seperatted and would not combine.
I learned to eat Mayo sandwiches from my father. SO good!

Omg this is freaking amazing
I would be fine with Best Foods or some commercial mayo but the only reason I make my own is so I don't have to use the unhealthy canola oil. I make mine with half olive oil, half fine quality avocado oil and it works great.
