    From the 3rd Generation sausage maker I would say this is a great introduction for beginners to make something a little different. However let me give those beginners just a few still in the beginner category ideas for this. In this type of sausage mixing to the point of homogenisation is key. However, if you don't have a casing you can't fully blend it, otherwise it will fall apart. If you have the standard KitchenAid mixer that many of us do, buy the very inexpensive meat grinder for it. It will come with two size grinding plates. After you've mixed the meet as suggested jn this video run it through the more course plate. Then do the overnight resting as the author suggests. The next morning take that meat and run it through the finer size plate. Then you can prepare them in the plastic wrap as Chef John demonstrated. If you've already gone to the trouble of buying the sausage stuffer attachment for that particular device, then you're probably Way Beyond watching this video anyway. I would say that this is a very nice introduction for beginners.

    If you have the KitchenAid stand mixer by the meat grinder sausage stuffer attachment. It's worth it. After refrigerating this meat mixture overnight run the mixture through the fine grinding plate. It will make the consistency even better 4 you are hot dog
