in portugal bifanas doesn't look like that
For once he didn’t overcook the veg but the bread was black so it was burnt and the pork has charred grill marks on it too. If you use a barbecue the key is to not cook anything until the coals are no longer red hot otherwise you’ll get burnt food. Gordon calls burnt food charred or caramelised but it turns the food bitter and acrid. He’s stuck in the 1970’s food wise.
