This was really good! I did cauliflower instead of celery and I saved time by using store bought French Onions. I also seasoned the pork with a dash of Montreal Steak Seasoning. Great video! Thank You.

I'm not actually a huge beer drinker, but I have some pork shoulder (already had some as a steak last night which was delicious but I thought I'd look for a stew recipe for something different). I also have an old bottle of Guinness in my fridge. It's a bit of a risk since I would normally put wine in instead but the comments are encouraging. I don't have any brussel sprouts so I might throw in some sui choy at the end instead. And I only have new potatoes, so I'll chuck those in instead of serving on mash. Update: So I wound up "Asianizing" it without even trying, just as a result of what I had available (sui choy/napa instead of brussel sprouts, chunks of daikon kind of like adding turnip, added half a green chilli minced just because I found it in my fridge and wanted to use it up and thought it would be good, garnished with green onion, soy sauce, dashi powder because I wasn't using stock, just water, shallots plus dried onion because I ran out of onions, Worcester sauce, dried thyme and basil because I didn't have parsley). So a different stew really. But the Guinness worked out really well! And I think going two hours instead of 1.5h really helped. I kept checking the meat, and it did finally get tender, which I think I've not waited long enough in the past for other stews, so that was super helpful.
My sister and I just moved into a new apartment. For our first dinner party, we had our mom and stepdad over for St. Patrick's Day and I made this stew and mashed potatoes for dinner. It got absolute rave reviews. Everyone loved it. Thank you for a recipe that was part of a lovely evening, Chef John. I've been a fan for years and your dishes will warm my new kitchen many more times. Cheers and Happy St. Paddy's Day (or "All Snakes' Day", as some of us modern Pagans call it as a cheeky jab at St. Patrick: "Hey, buddy, we're still here! You didn't get all the 'snakes'!")
