    Sweet stuffing and sage.Just no.Sweet stuffing and goose,duck or chicken,yes.Sage and onion and goose or venison or other dark meat, definitely. Hot and sweet is iffy except in something like BBQ sauce.Chestnuts and Brussels Sprouts.Stop being a sausage.

    Warning: if you do the pork and sage stuffing roll, and you maybe aren't quite as good a chef as Gordon is, you run the risk of the end product looking like a turd with some sage leaves stuck to it. You really need to do some trial runs before you think it would be ok to serve on Christmas day / thanksgiving. This can go very wrong, very easily. Fundamentally you are making a brown log like object so be really cautious…
