Is it just me or does this salad miss some more ansjovis?
no potatoes, no green beans, no mustard chef John… the dressing is red vinegar, salt, pepper and olive oil and basil… and add raw artichokes finely sliced, green bell pepper, fevette (young broad bean).

the dressing was on the thick side because Avocado and Mustard are both enough of an emulsifier to make it into a mayonnaise even without an egg.

As Chef John didn't mentioned I'm gonna go ahead and do it. If you're gonna do the dressing on an immersion blender like Chef John did, don't use extra virgin olive oil to begin with, it gets bitter when blended. You can use a bit of the regular olive oil to get it started and blended and then manually whisk in the extra virgin if you want.
