    You use, "WATER", "LEMON", and "CHEESE".. in your batter instead of milk/buttermilk??!! OH NOOO!! YUCK!! 😖 I never heard of that.
    However, your pancakes did look great, kind of like IHOP's.

    I made these and they were delightful!! I normally don't care for fluffy pancakes, but these were so light and had a lovely flavor. They even tasted delicious on their own without any toppings. I used Meyer lemons for this recipe and added extra juice because I love the taste of lemons. I didn't like maple syrup with these, surprisingly, so I just ate them with butter, powdered sugar and fresh berries. Love you, Chef John!!

    My girlfriend loved these, but I found them pretty frustrating to cook. Medium high heat seemed to be too high, and they are soft enough that every little twitch of the spatula scraping them off the bottom was engrained in the pancake. I’ll never do these again, but I appreciate the recipe

    These were absolutlyyyy amazing, but tip… if u adjust the recipient to more servings ADD MORE FLOUR THAN IT SAYS. I adjusted to 6 servings and ended up needed around a whole cup more of flour

    Try this with a lemon, butter and sugar sauce instead of maple syrup. Melt some butter, add sugar and stir until melted, add lemon juice. You’ll thank me! 😍

    There is NO WAY using water instead of milk could come out better. I substituted the lemon zest with a tablespoon of lemon curd, and then when using milk the lemon essentially turns it into buttermilk, and we all know about buttermilk pancakes. Otherwise the rest of the ingredients and instructions are great, but using water to make pancakes IS SACRILEGE.

    For your consideration…

    Sugar some mascarpone and layer it generously between the pancakes like sweet protein frosting :)…o Yummy… Now make a blueberry compote with 1 whole quart of blueberries and cover the pancakes with it like it was a ganache. If it will looks like "have some pancakes with your blueberries" then you got it right.

    This works… It works good.

    My younger brother had an allergy to beef products when we were kids. So, our mom would make pacakes with 7 Up instead of milk. I think that would replace the water in this recipe.

    Just made these on Christmas morning. Followed the recipe exactly as written, and the pancakes turned out very tasty and fluffy. I ended up making 18 pancakes. More than enough for 3, unless you have a teenager at home.

    Chef John, my wife has declared these to be her new all time favorite pancakes. But I have to confess that I didn't have the ricotta cheese so I substituted Cottage Cheese that i smoothed out with my immersion blender. I also folded in 3 oz. of wild blueberries to the batter and it just popped the whole recipe. Thanks for this great recipe.
