I noticed on your entire site you only have one goose recipe, and that was with a smoked product. I would love to have another recipe for Goose from scratch. I ask because we just got goslings, and that means goose in the fall.

I was thinking about this last night about shredded cheese….do you think most of your followers have a food processor? I process with the grater blade pounds of shredded cheese and then place it in the freezer until needed, especially parmesan. If I get good parmesan I usually use the regular blade to grind it for instance if it's a large amount. If I pack into regular size bags and then place in a freezer bag, it only takes 30 minutes or on the counter to thaw frozen shredded. I even put it in salads. Anyway, that's my personal solution to avoiding cellulose. The cellulose IS sawdust and doesn't melt right lol adore you, chef John!

I bought the entire Microplane brand grater set and love it!
They have several versions, I bought the one John showed, the “Gourmet” because of the rubber handle.
I bought 6 of the “Ribbon” graters (With the Food Guard) for Christmas gifts.
The Post Office sent the package to CT instead of CO, but Microplane’s Customer Support jumped all over it and sent a replacement immediately!
