    Kudos there, John. Hey, was that grill a Char Q by Weber? I recognize the grate design.  Because, I had been able to pick one up recently. Probably, one of the last ones out there.     I didn't have any Marsala wine, but I did have marsala cooking wine. Also, didn't measure anything. I loved the flavor! Gotta buy some real marsala wine!

    i think the secret to this recipe is using a nice sharp edged tong and mixing all the marinade together in a bowl for 10 min, but you gottttttaa do it like chef john for sure newbies.

    Really want to try this, but have these limitations – can't use wine, maybe substitue tarragon or balsamic vinegar? Alslo, There is no grill in sight. Can these be djust plopped in a big fry pane, maybe with some buttar? And wood it be wise to tenderize before marinading with one o' those multineedle stabber thingies?
