    Tiny suggestion: 1 tsp Chinese chilli paste instead of ketchup, brown miso instead of yellow, omit sliced peppers, dash of chinese black vinegar, use red wine, swirl of dark soy, 1/4 cup fresh made dashi, substitute shitake mushrooms, use grape seed instead of peanut oil. Omit butter, veal stock instead of chicken stock. Add wine to 'sweet' onions until they are translucent, while sauteeing, on medium heat. That's how I did it 😂😁

    I have this slow cooking right now using a venison neck roast cut into big chuncks. I went with a mix of sweet peppers, onions and regular mushrooms. Didn't have white wine so used red cab. Also added a little fresh ginger.
    My house smells like heaven right now.

    You can buy peanut oil on it's own. It's usually 'top shelf' above the other low-quality oils or hidden in with the olive oil or cocoanut oil.

    One of the biggest crimes in cooking is not to use that fond…I've seen youtube videos where they swap out the pan for a new one and it kills a little piece of my soul!
