You forgot to add tofu
You never add Miso directly to hot water. Jesus, Gordan!
instead of spinach use seaweed paper it will work like the spinach and get soft and it would be more traditional
._. ummm I might get chewed out for this but miso soup is my favorite I have to. Miso paste should always be added at the last minute. The reason is because the heat kills the good bacteria and dulls the flavor. Once everything is finished pour into the serving dish then add the miso.

Make "dashi(soup stock)" first and boil it. The miso should be put in at the end after everything is cooked. Never boil miso. Just an "advice" from a Japanese.
"Add dry shittake mushrooms, that have been soaked in water." Well they're not dry then are they?
The miso should actually be put in last. If you put it in early it will lose most of the miso flavor and the paste should be put in a strainer and mixed in with the water to break the clumps and liquidize to a thick broth just so you won't get clumps of miso.
Stick to your white dishes, Gordon. The techniques of Asia are beyond even you.

He made his first mistake right at the beginning. You don’t add miso into boiling water. Miso contains active cultures that are very beneficial to your gut health. Boiling water kills off the probiotics and your burning the paste thus stripping it of nutritional value. Your supposed to let the water simmer. Always add miso last by whisking it in.
