Moroccan-Spiced Pork Loin Roast – Food Wishes – Holiday Roast ctm magazine

This amazing Moroccan-spiced pork recipe is actually adapted from a classic technique for roasting leg of lamb. While this spice-rub is incredible with either, by using this approach instead, we’re not only saving a few dollars, but it’s also a proven scientific fact that your average holiday dinner guest (American, at least) is more likely to prefer roast pork to the slightly more exotic lamb.

Made this for dinner last night and it was delicious and absolutely gorgeous. Next time I'll try to have the stuff for the yogurt sauce because I think that would elevate it to a whole other level, but even without, the roast and veggies were still amazing, My sister and I felt like we'd be transferred from our apartment kitchen during quarantine to a fancy restaurant on a special occasion. Thanks, Chef John!

Thank you…just came here for the time to bake and the veggies..

  • Angela Ponder on October 14, 2020

I goofed and had my oven to hot.. 375 degrees and turned it down as soon as I realized. Check meat 30 minutes in… mine was over cooked at 50 minutes. Veggies were not done. Just put the veggies back in. Otherwise this would have been a perfect meal. Just goofy stuff on my part.

    Yum! 💖

  • R111CHARD on October 26, 2020

If I cook it through, but can't serve it immediately, how would I warm it up again? When I originally cooked it, it was tender but when I left it in the oven to reheat it was tough. Any pointers?

I made this with some different vegetables, as I had them on hand. I used green bell pepper in lieu of the chilies, added a bit of tumeric and a curry that I like. Used white onion, celery, green onions. It was fantastic! The rub is easy to use and add what you like. I don't think this one is that easy to screw up, which adds to the appeal. Used applesauce for a compliment and basmati steamed rice with a bit of tumeric and raisins.

Wait…I’m lost. Moroccan “pork” balls??? Isn’t that an oxymoron??? Morocco is a Muslim nation, soooooo….they have a pork dish???

  • russell powers on December 27, 2020

Man, this was a fantastic meal! It made an otherwise sad Christmas into something memorable. It made a great leftover meal the for the next day too! We chopped it up with pitas and hummus. Thanks!

What a great meal. Tons of flavor and quite easy to prep. Great job John.

  • Hart Coronet on February 26, 2021

If you're "scared" of butterflying a pork loin, can't you ask a butcher to do it for you? Or do they not offer that kind of service any more?

  • Ryan Spangler on April 15, 2021

I wouldn’t think they’d eat pork in Morocco

  • Frankenstein's Dealer on May 3, 2021

I really want to try this, but I'm absurdly resentful that you reminded me about the existence of Crazy Town and their awful, awful "Butterfly," I always lose my appetite by the end of this video. 😂

  • coucou Brandy10 on May 14, 2021

Hmm, nobody noticed that Moroccans don't eat pork ? They're Arabs. Unless he's talking about the spices…

  • John J Perricone on May 18, 2021

    Making this soon.

  • Nicolás García Lieberman on May 28, 2021

Omg culinary cleavage, I was NOT ready

  • jo blo on June 28, 2021

Edit: 6/29 The flavor was amazing! I overcooked the roast, so next time I will be sure to check it as it's cooking. The potatoes, carrots and onions were out of this world! The meat was okay, just really dry! : (

6/28 So I have this in the oven right now. The salt was very very scary for me…even after sitting out for 35+ mins…the salt was still visible. I patted it dry like the directions tell me to do, but it didn't rid any of the salt. I didn't have any problems with the spread…it went on beautifully. I'll update tomorrow to let you know how it came out! I'm so nervous about the salt now because his salt on the pork is not visible like mine was. 😳 sweat sweat sweat sweat

  • Rob Hymers on August 20, 2021

I made this and it was awesome.

  • Teo Campbell on August 24, 2021

I admittedly haven't made this yet myself, but a friend of mine asked today for ideas of what to do with pork loin, and I sent them this video to rave reviews once the roast was finished!

  • Kevin Korson on November 17, 2021

    chef john wins youtube, again.

  • Glenn Storey on November 27, 2021

While I suspect this is, as usual, delicious, I will go out on a limb and bet that there is no chance a pork dish will be served in Morocco.
