    Made this for dinner last night and it was delicious and absolutely gorgeous. Next time I'll try to have the stuff for the yogurt sauce because I think that would elevate it to a whole other level, but even without, the roast and veggies were still amazing, My sister and I felt like we'd be transferred from our apartment kitchen during quarantine to a fancy restaurant on a special occasion.     Made this tonight, it was a massive hit and very simple. I let the brine and marinade soak for half a day..was great.

    I goofed and had my oven to hot.. 375 degrees and turned it down as soon as I realized. Check meat 30 minutes in… mine was over cooked at 50 minutes. Veggies were not done. Just put the veggies back in. Otherwise this would have been a perfect meal. Just goofy stuff on my part.

    If I cook it through, but can't serve it immediately, how would I warm it up again? When I originally cooked it, it was tender but when I left it in the oven to reheat it was tough. Any pointers?

    I made this with some different vegetables, as I had them on hand. I used green bell pepper in lieu of the chilies, added a bit of tumeric and a curry that I like. Used white onion, celery, green onions. It was fantastic! The rub is easy to use and add what you like. I don't think this one is that easy to screw up, which adds to the appeal. Used applesauce for a compliment and basmati steamed rice with a bit of tumeric and raisins.

    Man, this was a fantastic meal! It made an otherwise sad Christmas into something memorable. It made a great leftover meal the for the next day too! We chopped it up with pitas and hummus. Thanks!

    Edit: 6/29 The flavor was amazing! I overcooked the roast, so next time I will be sure to check it as it's cooking. The potatoes, carrots and onions were out of this world! The meat was okay, just really dry! : (

    6/28 So I have this in the oven right now. The salt was very very scary for me…even after sitting out for 35+ mins…the salt was still visible. I patted it dry like the directions tell me to do, but it didn't rid any of the salt. I didn't have any problems with the spread…it went on beautifully. I'll update tomorrow to let you know how it came out! I'm so nervous about the salt now because his salt on the pork is not visible like mine was. 😳 sweat sweat sweat sweat
