I’ve made this dish twice this week…it’s absolutely delicious. I was only able to find Jumbo Lima beans…they worked great. Thanks for this recipe.

You can find real "Gigantes" beans in a Greek ethnic grocery store. I live in Greece and they are now bringing them here from China. Try to get the real thing. You can save a few and plant them in your garden. You must fully cook beans in plain water. Once you add salt or acid, They do not soften properly.

    Thank you for the vid!

My grandma makes this a little differently but I'm sure this also tastes great. While she's boiling the beans she sautés a yellow onion and a carrot, which she chops finely, adds those to the casserole dish with some dried mint and only half the amount of tomato purée and adds the bean cooking water instead of fresh water.

Tip to cheese makers: I you create a now type cheese, give careful thought to the naming of your product. Feta is a prime example of what NOT to name a cheese. While the cheese itself is fine, the name sounds too much like fetid to stir up sales. Imagine a chef making some great baked beans, then topping with feta. Would those beans then be considered " fetaed". Hardly makes one salivate.

You wouldn't have to worry about surviving on a vegetarian diet with this. You have a complete protein you have the beans, and you have the cheese to compliment them. This is a complete meal.

Mine came out of the oven too watery even though I followed everything to the letter. 😟

  • Hilda Mondonedo on June 25, 2021

I like to sautee the onions first with garlic and celery. I also add 2 cooked carrots as well and a cup of olive oil goes in while baking. I know this is your version, but you did say they are Greek and we prepare them like mentioned above!

I found these Mid-East Braod Beans (sic) at the local Lebanese import market. Tomorrow we eat like Goddamned Sultans.

  • Doug Mundie on August 31, 2021

Greeks on this side of the Atlantic refer to them as Elephant Beans.

Wow! Chef John ..greetings from Pakistan

  • B K on September 11, 2021

Tried this and mine didn’t come out looking like yours at all. It was disgusting. Watery, tasteless except for tomato and dill flavor (which isn’t good together). Totally bummed. Literally threw the whole 9×13 away 🙁

  • Dana Saffron, Saffron Wilson Group on October 27, 2021

Looks delicious!! BTW how did you clean that pan ? OY

  • Melina K. on November 28, 2021

Chef John, this looks great. I love your recipes and your videos are amazing! Just one thing… could you please, please add the recipe measurements in the metric system as well. It is really hard to follow a recipe when you have to convert every single ingredient… Best wishes from Greece!
