    In Switzerland, we call it “Flaedeli” or “Eierflaedeli” and we put it in soups too. We make it without the sugar though.

    I think this recipe could go halfway to a homemade funnel cake, if you stopped at the parmesan and did a second frying dipped with egg batter and powdered sugar at the end.
    The concept would go over well with consumers who missed the food from the county fair this year. You could do most of the recipe with extra eggs, which are affordable and could use some demand boost.
    P.S. There is another opportunity to sneak in health food with greens powder or moringa atop powdered sugar, not to mention whole grains or buckwheat in the pancake batter.

    This actually exists in a variation in Germany (the land of Spätzle as you mentioned) where pancake strips (not semolina but std. flour pancakes) are added into Soups instead of noodles or dumplings or such. They are more common in southern germany and called Flädle which could be translated into string-ies or so.
